Sugar-Free Cocoa, Almond & Strawberry Biscuits
Makes 12–15 biscuits
Naturally sweetened with pear and strawberries, these soft cocoa biscuits are made with ground almonds and absolutely no added sugar. Perfect for little hands — and tasty enough for the whole family.
Ingredients
100g plain flour
60g ground almonds
15g unsweetened cocoa powder
½ tsp baking powder
60g unsalted butter, softened
½ tsp vanilla extract
90g dried strawberries
70g pear purée
Method
Add the plain flour, ground almonds, cocoa powder and baking powder to a large bowl and mix together.
Add the softened butter, vanilla and pear purée.
Put the dried strawberries into a food processor and blitz until very finely chopped or almost paste-like. Add to the bowl.
Mix everything together until it forms a soft biscuit dough. Try not to overwork the mixture — just bring it together until combined.
Cover and place the dough in the fridge for 30 minutes to firm up.
Preheat the oven to 170°C fan and line a baking tray with baking paper.
Lightly flour your work surface and roll the chilled dough to around 6–8mm thick.
Cut into your chosen biscuit shapes and transfer to the prepared tray.
Bake for approximately 15 minutes. Allow them to cool on the tray for a few minutes before transferring to a cooling rack.
The result is a soft, slightly crumbly cocoa biscuit packed with little bursts of strawberry — one sugar-free treat for the whole family.
