TRADITIONAL AMERICAN PANCAKES
Fluffy, golden and perfect for sharing – these traditional American pancakes are topped with creamy yoghurt and plenty of fresh fruit, they're a simple breakfast or brunch that feels a little bit special without being complicated.
The best part? One easy batter can be adapted for little ones and the rest of the family, so everyone can enjoy sitting around the table together. Because the best meals are the ones shared.
Ingredients - One Batter for everyone
250g self raising flour
2 tsp baking powder
2 large eggs
300ml milk
1 tsp cinnamon powder
1 tsp vanilla bean paste ( careful of added sugar )
METHOD
1. Mix all ingredients together in a bowl or large jug
2. Melt a knob of butter in a none stick frying pan on a medium heat
3. Pour your batter into the pan in suitable sizes for adults and babies
4. Do not touch the batter until you start to see bubbles on the surface, and then flip.
5. Pancakes are ready when cooked through.
To Serve - Adults
Top with Greek yogurt, fresh fruits, pumpkin seeds, and a generous drizzle of honey or maple syrup. This version I have also drizzled with a white chocolate hazelnut spread.
