MINI CARAMELISED ONION AND GOATS CHEESE PIZZA

These Mini Caramelised Onion & Goat’s Cheese Pizzas are perfect for keeping in the freezer. They’re ideal for snacks, lunchboxes, picnics or a light lunch, with a mild baby version and a rich, sweet caramelised onion topping for adults. Simply bake straight from frozen whenever you need a quick homemade meal.

Makes: 6 adult mini pizzas and 12 baby mini pizzas

Ingredients

Pizza Base

  • 1 packet ready-made pizza dough

Tomato Base

  • 75ml pizza passata

  • 35g tomato purée

  • 2 tsp dried oregano

  • ½ tsp black pepper

Topping

  • 1 large onion, thinly sliced into half moons

  • 1 knob unsalted butter

  • 1 tbsp light brown sugar (adult version)

  • 1 tbsp balsamic vinegar (adult version)

  • Splash of water (adult version)

  • Approximately 170g goat’s cheese

  • Extra dried oregano, to sprinkle

Method

Preheat your oven if cooking straight away, or prepare a tray for freezing. (180degrees)

Roll out the pizza dough and divide it into 6 adult-sized mini pizza bases and 12 smaller baby-sized pizza bases.

Mix together the pizza passata, tomato purée, oregano and black pepper, then spread a little over each pizza base.

Meanwhile, melt the butter in a large frying pan over a low heat. Add the sliced onion and cook gently, stirring regularly, until beautifully soft, golden and caramelised.

Remove one third of the onions for the baby pizzas.

To the remaining onions, add the brown sugar, balsamic vinegar and a splash of water. Continue cooking over a low heat until the mixture becomes rich, sticky and jam-like.

Top the baby pizzas with the plain caramelised onions.

Top the adult pizzas with the balsamic onion jam.

For the baby pizzas, crumble a small amount of goat’s cheese over each one.

For the adult pizzas, cut the goat’s cheese into approximately 0.5-1cm rounds or cubes and place over each pizza.

Finish with a light sprinkle of dried oregano.

Place the pizzas onto a lined tray and freeze until solid. Once frozen, transfer to a freezer bag or airtight container.

To Cook

Bake from frozen at 180 degrees for approximately 15–16 minutes, or until the bases are golden and the cheese has melted.

If cooking fresh, they’ll take a little less time, so keep an eye on them until golden and cooked through.

Freeze the pizzas individually on a tray before transferring them to a freezer bag. This means you can cook just one or two whenever you need them, making them perfect for busy weekdays, quick lunches and last-minute picnics.
