SUMMER BEAN, CUCUMBER AND FETA SALAD
Fresh, colourful and bursting with flavor, this is the sort of salad that proves simple ingredients can be something really special. Crisp cucumber, creamy feta and hearty beans are brought together with a light, zingy dressing to create the perfect side for barbecues, picnics or relaxed family lunches in the sunshine.
Ingredients - this is super flexible to what you have avaliable.
I pack of Feta ( crumbled )
150-180g fresh or frozen peas ( cooked and cooled )
100-120g fresh or frozen broad beans ( cooked and cooled )
100g cucumber ( diced )
100-120g green beans ( cooked and cooled )
couple of handfuls of pea shoots
ingredients - DRessing
50ml olive oil
20ml fresh lemon juice
handful of fresh parsley
handful of fresh mint
Salt and pepper
splash of maple syrup ( honey also works well )
Method
Cook broad beans, peas and beans and cool in cold water. Once cooled drain and put in a large mixing bowl
Chop the cucumber and add into the bowl.
To make the dressing, add all ingredients into a food process and wizz together. Pour the dressing over the beans and cucumber and too gently
Crumble the feta over the top, keeping some larger chunks intact
Finish with a generous handful of pea shoots just before serving.
