STRAWBERRY LOAF
There’s something about strawberries that instantly feels like summer. Sweet, juicy and bursting with flavor, they’re one of those ingredients that rarely make it all the way home without a few disappearing along the way.
This simple one-bowl strawberry loaf is one of our favourite family bakes. Soft enough for little hands, delicious enough for grown-ups, and easy to adapt so everyone can enjoy the same recipe together. Bake it as a loaf for the family, use a mince pie tin for perfectly sized baby portions, or add a handful of white chocolate chips to the adult version for a little extra treat.

Ingredients
250g self raising flour
2 large tsp baking powder
2 large eggs
80ml melted butter
100ml milk of your choice
350g strawberries, roughly chopped and tossed in flour
1tsp of vanilla bean paste ( checking for sugar )
ADULTS ONLY
60g white chocolate chips stirred through the adult loaf
For the white chocolate drizzle (adults)
• 40g white chocolate
• 10ml double cream
Optional decoration
• Chopped pistachios
• Fresh sliced strawberries
To serve
• A dollop of Greek yoghurt and fresh strawberries
The Tiny Feast Co Tip
Easily made dairy free by replacing the butter with vegetable oil, and a dairy free milk alternative - Chocolate chips are optional.
Method
1. Preheat the oven to 180°C (160°C fan).
2. In a large bowl, combine:
• self-raising flour
• baking powder
• eggs
• melted butter
• milk
• finely chopped strawberries
Mix until everything is just combined.
3. Pour some of the mixture into a mini loaf tin (and divide between a mince pie tin for baby-sized portions).
4. Stir the 60g white chocolate chips into the remaining batter and pour into a small loaf tin for the adult version.
5. Bake:
• Baby mini portions: approximately 20 minutes
• Adult loaf: approximately 45 minutes
The loaf is ready when a knife inserted into the centre comes out clean.
6. Allow both loaves to cool completely.

White Chocolate Drizzle (Adults)
1. Place the white chocolate and double cream in a heatproof bowl over a pan of gently simmering water.
2. Stir until smooth.
3. Pour over the cooled loaf.
4. Finish with chopped pistachios and fresh strawberries, or decorate however you like.

Serving
Serve thick slices with a generous dollop of Greek yoghurt.
Tiny Feast Tip: The baby loaf is naturally sweetened with strawberries, making it perfect for little hands. The adult loaf gets a little extra indulgence from the white chocolate chips and drizzle, but both start from exactly the same family-friendly batter.
